Caramel Banana Nice Cream with Trail Mix Granola

Ingredients

Trail Mix Granola
2 1/2 cups trail mix*
1/4 cup cashew butter (or nut/seed butter of your choice)
1 tbsp maple syrup (or liquid sweetener of choice)
1/2 tsp flaked sea salt

Caramel Banana Nice Cream
3 medium organic bananas, frozen
1 tsp maca powder
2 tsp coconut sugar

Method

  1. Trail Mix Granola: Heat oven to 300°F.
  2. Add all trail mix ingredients into a mixing bowl. Combine with a fork until everything is well coated and can stick together.
  3. Line a square baking dish with parchment paper. Press the mixture into the baking dish, making sure that it is tightly compact to create the best clusters. You can use another piece of parchment paper on top of the mixture and press down on the top (if any seeds pull off when you remove the top layer of parchment paper, you can press these back in with you hands or enjoy them as a little snack!)
  4. Bake for 30-40 minutes.
  5. Allow to cool completely before breaking up into clusters and enjoying.
  6. Caramel Banana Nice Cream: Add all ingredients into a high speed blender or food processor. Blend until completely combined and smooth like ice cream – you may need to stop and scrape down the sides of the machine once or twice to make sure that everything is incorporated well.

Notes:

  1. *I like to use a mixture of raw nuts, raw seeds, and dried fruit that does not contain added sugars or sulfites. You can use a homemade concoction with your favourites, or use a pre-made mix. The pictured granola contains raw cashews, raw almonds, raw pumpkin seeds, raw sunflower seeds, dried cranberries, and dried golden raisins.
  2. *This recipe works best when there are smaller seeds in the mix as these hold all of the larger components together into the clusters. I use sunflower and pumpkin seeds, as these are my favourites, but hemp seeds are fantastic as well!
  3. *Try add-ins like coconut and banana chips, seasonal spices, or apple chips and dried dates to change up the flavour profile. Use your favourite nuts, dried fruits, and flavourings to make these a treat that you’re sure to enjoy!
  4. Liquid sweetener substitutes: honey, vegan apple-based “honey”, agave nectar, rice malt syrup, liquid monk fruit sweetener, coconut syrup.
  5. The flavour of medjool dates go well with this recipe as well, but the frozen nice cream makes the consistency of dates very chewy. If using, I recommend cutting dates into very small pieces (like mini chocolate chips) so that they do not require as much chewing.
  6. Option to sprinkle a pinch of flaky sea salt on top if you love salted caramel!
  7. Feel free to add a scoop of salted caramel protein powder to the Nice Cream recipe, as there are so many on the market these days. You may need to add a splash of liquid (ex. cashew milk) when adding protein  to make sure that everything comes together.

      Thank you for pointing that out!

      Maca powder is a great adaptogen that is helpful for balancing hormones, in both men and women! It has gone from being available only in health food stores to now being available in regular grocery stores and even online. The better quality that you get, the more caramel/toffee flavour it has.

      It is, however, NOT recommended for those with hypothyroidism, as it can exacerbate problems in these people.
