Nectarine Salad

Ingredients (per person*)

2 loose handfuls (~3 cups) baby lettuce mix (or mixed lettuces of choice)
1/2 nectarine, sliced into small wedges
2 tbsp pickled red onions
loose 1/4 cup pea sprouts (or microgreens/sprouts of choice), rinsed and dried
1 tbsp sliced almonds
optional: 1 tbsp goat’s milk feta, crumbled or cubed

ginger sesame vinaigrette

Method

  1. Add all salad ingredients to a bowl. For visual appeal, start with baby lettuce mix and pea sprouts, then top with nectarines and onions, then nuts and feta. This allows all of the colours to shine through.
  2. Dress with desired amount of vinaigrette just before serving.

Notes:

  1. *The amount of each ingredient per person will differ depending on the volume that you are making and what else you are eating with the salad. For example, you may be serving 6 people but do not need 3 nectarines or 18 cups of greens to serve as a side salad. Use your best judgement and visual cues to tell if the proportions look right to you.
  2. If serving to company right away, dress the greens and half of the toppings before intentionally placing the remaining toppings on top. This helps to maintain presentation when serving at the table.
  3. This recipe goes very well with crispy tofu nuggets or honey ginger grilled salmon.
