Cherry Limeade Popsicles

Ingredients

2 cups fresh or thawed frozen cherries, pitted
1/2 – 3/4 cup honey (or liquid sweetener of choice)
1 cup lime juice
4-5 cups water*

Method

  1. In a blender or food processor, blend together pitted cherries, honey, and lime juice until smooth.
  2. Using a sieve, strain the cherry skin/pulp from the cherry limeade syrup. Use a spatula or spoon to move the pulp around so that you get all of the syrup! If you would like to keep the cherry limeade as a drink, you can add the syrup right into a serving jug.
  3. Add water to syrup and stir to combine.
  4. Pour cherry limeade into popsicle molds. Popsicles take around 4-8 hours to freeze, so I like to leave them overnight and enjoy them the next day!

Notes:

  1. Honey is easily substituted by maple syrup, agave nectar, or even vegan apple-based “honey”. If you only have dry sugar on hand, you can either turn it into a simple syrup first or mix the sugar with boiling water and allow the mixture to cool to room temperature before pouring into molds.
  2. You can easily substitute lime juice for lemon juice and make cherry lemonade.
  3. *Substitute water for sparkling water or soda water for a different texture. The fizziness is great when making into popsicles or drinking as is!
  4. *I like to use less water when just having this as popsicles, and more if having just as a drink. I made this recipe for myself to have 6 popsicles (for the molds I have) and leftovers to drink, so I add more water after the popsicle portion has been poured out.
