Apple Donuts

Ingredients

eating apples (choose your favourites – I love gala apples)
nut/seed butter or other spread (choose your favourites – I love my raw almond butter and chocolate almond butter, but sunflower seed butter and cream cheese are popular as well)
toppings (choose your favourites – I love my vanilla almond granola the most, but I also like cacao nibs, EnjoyLife mini chocolate chips, sliced nuts or nut crumbs, seeds (ex. chia, pumpkin, sunflower), buckinis, apple cinnamon granola and chocolate granola)

Method

  1. Turn an apple on it’s side and carefully cut into slices, making them as thick or thin as you like (do remember that thinner slices will be weighed down with the toppings later).
  2. With an apple corer, a teaspoon, or a paring knife, remove the core in the middle to create your donut shapes.
  3. Smear your spread of choice on the tops of the apple donuts like icing.
  4. Sprinkle your toppings of choice onto your “icing”. You can also fill small bowls with the toppings and dip them in “icing”-first for more compact toppings.

Notes:

  1. If you are making this recipe or preparing the apples ahead of time the apples may start to brown quickly after slicing. To prevent browning, you can either spritz the apples in lemon juice or keep them in a lemon juice/cold water solution. The more lemon juice you use, the less it will brown, but the more the apples will taste of lemon. Typically, 1 tbsp of lemon juice per 1 cup of water is a good ratio.
