Ingredients
2 cups quick oatmeal
1/2 cup sliced almonds
1/2 tsp salt
1/2 cup almond butter (or raw almond butter)
2 tbsp honey
1 1/2 tsp vanilla
Method
- Preheat oven to 325°F and line a baking sheet with parchment paper.
- In a large mixing bowl, combine oatmeal, sliced almonds, and salt and mix so that everything is distributed evenly.
- Add almond butter, honey, and vanilla. Mix well using a fork and/or your hands to ensure that everything is coated well.
- Spread granola mixture on parchment paper lined baking sheet. For chewier granola, pack the granola down and together into a tight rectangle in the middle of the baking sheet. Crispier granola can be spread evenly across the sheet.
- Bake for 20 minutes. Do not mix during cooking time if you prefer clusters. If you like a loose granola (smaller or no clusters), mix half way through cooking time. Be sure to watch granola around the 15-20 minute mark to ensure that it does not burn.
Notes:
- You can purchase sliced almonds with or without the skin on. I like to crush the sliced almonds slightly as I add them to the mixing bowl so they are a more similar size to the oats. You can also use whole almonds and slice or chop them carefully by hand.
- Store in an airtight container.
- Use as a topping for smoothie bowls, nice cream, yogurt parfaits, and chia pudding; enjoy with cashew milk and berries; or enjoy it as a snack in trail mix or on its own.
