Roasted Butternut Squash

Ingredients

1 medium butternut squash, peeled, gutted and cut into 2cm cubes
1 – 2 tbsp olive oil
1 tsp seasoned salt
options: 1 tbsp maple syrup or 1 tsp sage, chopped

Method

  1. Preheat oven to 400°F.
  2. Add all ingredients to a mixing bowl and toss to coat the squash.
  3. Spread evenly on a baking sheet.
  4. Place in the oven for 35-45 minutes (until fork tender), stirring halfway through the cooking time.

Notes:

  1. Cooking time for the butternut squash depends on how ripe it is and whether or not it is in season. For less ripe, out of season butternut squash, you may have to increase the cooking time to 60 minutes for it to be fork tender.
  2. To tell if a butternut squash is ripe, choose a squash that has a matte skin that is a dark shade of beige. It should not have any green patches on its exterior.
  3. Try mashing your leftover butternut squash and putting it on a sandwich for a savoury-sweet spread!
