Stuffed Medjool Dates

Ingredients

pit-in medjool dates
nut or seed butter of choice (I like almond butter, pecan butter, or cashew butter)
ripe banana, cut into half rounds
raw honey
cinnamon
sea salt

Method

  1. Cut dates length-wise to the pit and carefully remove pits.
  2. Spread nut or seed butter of choice in the opened dates.
  3. Place half banana slice in the opened dates and sandwich closed.
  4. Drizzle a touch of honey over banana.
  5. Sprinkle with cinnamon and sea salt.

Notes:

  1. You may use pre-pitted dates for this recipe, however, pre-pitted dates have a much drier, chewier texture and less sweetness.
  2. Toppings can be substituted for chocolate nut butters, cacao nibs, almond slivers, and any other other topping you can think of!
