Ingredients
1 1/2 cups oats
1/3 cup unsweetened applesauce
1 tbsp oil (coconut, olive, avocado, etc.)
1/4 cup half maple syrup and half honey
1/2 tsp vanilla
3/4 tsp cinnamon
1/4 tsp salt
3/4 cup chopped pecans
Method
- Preheat oven to 325°F.
- Combine all ingredients in a medium-sized mixing bowl.
- Line a baking sheet with parchment paper.
- Dump granola over baking sheet and gently spread into an even layer.
- Bake in preheated oven for 13-15 minutes.
- Mix granola to ensure even cooking.
- Place back into the oven for an additional 13-15 minutes.
- Allow to cool before eating (hot sugar and oil can burn your mouth badly!)
Notes:
- For chunkier granola be more gentle during the mixing stage, and for a more pourable granola, mix generously.
- This granola goes beautifully with vanilla Greek yogurt and frozen blueberries for a blueberry and apple crisp a la mode inspired breakfast.

I made it tonight. Perfect amount, and had to snack on it before tomorrow’s breakfast. Smells amazing (used pure vanilla extract from Mexico) and tastes amazing too. Thanks for posting this recipe!

Looks sooooo amazing, Stacey! I just bought some store-bought, and it’s hard to find low-sugar varieties. I’ll try this next.
