Black Bean Burgers

Ingredients

1 can black beans, drained and rinsed
1 egg
1/4 red onion, diced
1/2 roasted red pepper, diced
1/2 cup oatmeal
1 clove garlic, grated or minced
2 tbsp parsley, roughly chopped
1 tsp cumin
1 tsp chili powder
1/2 tsp salt
1/4 tsp pepper

Method

  1. Preheat oven to 400°F OR turn on your BBQ.
  2. Add drained and rinsed black beans to food processor and blend until the beans can stick together.
  3. In a mixing bowl, combine bean paste with all other ingredients.
  4. Mix to distribute all of the ingredients evenly.
  5. Form mixture into patties (recipe makes 3 big or 4 regular sized burger patties).
  6. Place onto a parchment paper lined baking sheet and cook in the oven for 20 minutes OR cook on the BBQ until heated throughout.

Notes:

  1. You can also puree black beans in a blender or with a potato masher, and you can also leave whole beans on the side or only blend the beans a bit. This all depends on what you have in your kitchen, and how chunky you like your burgers.
  2. This recipe can also be used to make sliders. Form the mixture into many small patties and reduce cooking time to 10-15 minutes.
  3. The burgers should hold together on the BBQ, but to make sure your burgers don’t fall apart and get lost in the fire, line the grill with aluminum foil where you are going to be placing your patties, or use a grill pan before putting them on to ensure you actually get to eat them!
  4. I love having these burgers in a pita with spinach, feta and avocado. They’re also great with roasted red pepper hummus and/or vegan cashew tzatziki.
