Ingredients
1 400mL can of chickpeas, drained, rinsed, and dried (air dried or with paper towel)
1 tbsp olive oil
1 tbsp cajun spice powder
1/2 tbsp chilli powder
1/2 tsp Worcestershire sauce (vegan & GF if needed)
1/2 tsp salt
Method
- Preheat oven to 450°F.
- Mix drained, rinsed and dried chickpeas with remaining ingredients.
- Transfer seasoned chickpeas onto a sheet pan (lined with parchment paper if preferred) and roast in the oven for 20 minutes, stirring halfway through the baking time.
Notes:
- Tamari can be substituted for Worcestershire sauce if needed.
- For crispier chickpeas, you can leave the oven door open slightly for the last few minutes of the cooking time. This allows the steam to escape rather than circulating around the chickpeas.
- This recipe can be enjoyed any time as a crispy snack. It is also a delicious topping for hummus (especially sweet potato hummus) or as a grain-free crouton in salads!
