Vegan Burrito Bowls

  • 1 cup brown rice
  • 3 cups vegetable broth
  • 1 can of black beans (drained and rinsed)
  • 4 tsp Lizano salsa (available on Amazon)
  • 1 red bell pepper, sliced
  • 1/2 red onions, sliced
  • 2 tsp olive oil
  • cherry tomatoes, cut in half
  • guacamole
  • Taco Tuesday Flavor God seasoning (to taste)
  1. Cook brown rice using vegetable broth and 2 tsp of the Lizano salsa (following directions on rice package)
  2. Heat black beans over medium heat with remaining 2 tsp of Lizano salsa, 1/4 cup of water and Taco Tuesday seasoning, to taste. Heat until the liquid cooks down to desired thickness
  3. Sauté (in a separate pan) red onions and red bell peppers in olive oil over medium-high heat until softened slightly. Season with Taco Tuesday seasoning, to taste, and continue cooking until desired texture
  4. Assemble burrito bowls by scooping 1/3 of rice into 1 of 3 reusable containers. Layer with 1/3 of black bean mixture, 1/3 of sautéed veggies and 1/3 of halved cherry tomatoes. In a separate sauce container, portion 2-3 tbsp of guacamole to add after heating burrito bowl when ready to eat.
  5. Enjoy!
