Ingredients
gluten free pasta of choice
roasted red pepper bruschetta
vegan basil pesto
optional: olive oil
Method
- Cook pasta according to package directions. Strain pasta and rinse in cold water if necessary (this is typical for gluten free pastas). Set aside to strain.
- Return emptied pasta pot to stove over medium heat. Add olive oil, pesto, and bruschetta – if your pesto is quite runny, the additional olive oil may not be necessary. Mix to combine.
- Add in cooked pasta and stir to combine. Heat over medium heat, stirring frequently, until heated through.
