Pesto Bruschetta Pasta

Ingredients

gluten free pasta of choice
roasted red pepper bruschetta
vegan basil pesto
optional: olive oil

Method

  1. Cook pasta according to package directions. Strain pasta and rinse in cold water if necessary (this is typical for gluten free pastas). Set aside to strain.
  2. Return emptied pasta pot to stove over medium heat. Add olive oil, pesto, and bruschetta – if your pesto is quite runny, the additional olive oil may not be necessary. Mix to combine.
  3. Add in cooked pasta and stir to combine. Heat over medium heat, stirring frequently, until heated through.

Notes:

  1. This recipe is a great light dish to serve along with your favourite proteins and side dishes.
