Huevos Rancheros Verde

Ingredients

grilled tomatillo salsa verde, serve heated

eggs, preferably free range!
corn tortillas
vegetable oil
seasoned salt or salt & pepper

avocado*
optional toppings: queso añejo (traditionally made with goat’s milk) or crumbled goat’s milk feta, cilantro, pickled red onions, dairy-free sour cream

Method

  1. If you have not prepared your salsa verde already, go ahead and prepare that first. If it is freshly made like this, it can be used while still hot from grilling.. If using pre-made or leftover salsa verde, you can heat this up on the stove or in the microwave before using to top your eggs.
  2. Cook eggs: Heat a pan over medium to medium-high heat. Add a little bit of vegetable oil to the pan to prevent your eggs from sticking – I use an oil spray bottle from my local dollar store to decrease the amount of oil I use. Crack eggs into pan so that they are not touching. Place lid onto pan to help eggs cook on top while the pan cooked the bottoms. Cooked to desired doneness, sprinkle with seasoned salt or salt and pepper, remove from pan and set aside.
  3. Warm tortillas: For softer tortillas – add to the heated pan after eggs are removed and place the lid on to steam the corn tortillas through. Flip after 2 minutes and heat on the other side as well then remove from pan. For tostada tortillas – add additional oil to the pan and increase heat to medium-high. Add corn tortillas and fry until crispy and golden, flipping halfway through to ensure that both sides are crisp. Remove from pan and place on paper towel to remove any excess oil and keep tostadas crispy.
  4. Assemble: Mash avocado onto your warmed or crisped tortillas and season with a bit of salt. Place cooked egg(s) on top of the avocado layer. Pour heated salsa verde to cover each egg. Top with optional toppings to add flavour and visual appeal to your huevos rancheros!

Notes:

  1. *Huevos rancheros is traditionally made using refried beans (not avocado). I used avocado in this recipe to add extra green, but you can make this more traditionally with refried beans, or use both!
    If using refried beans, I personally look for a brand with wholesome ingredients and no added tomatoes. Add a bit of water (to prevent the beans from drying out) and heat in a small saucepan or in the microwave until warmed. You can also add additional seasonings if preferred.
  2. I like to use 1 sunny-side up egg per tortilla, but you can cook your eggs however you like and use however many you prefer for your preferences and dietary needs.
