Ingredients
Kimchi Pancake (makes 1 large pancake)
1/2 cup white buckwheat flour*
2 tbsp tapioca starch
1/2 cup + 2 tbsp water
1/2 cup kimchi (vegan and gluten-free if needed), roughly chopped [I just do this with kitchen scissors in the measuring cup]
1/4 cup green onions/scallions, cut into 2 inch long pieces
2 tbsp – 1/4 cup vegetable oil/neutral frying oil of choice
Tamari Dipping Sauce
2 tbsp tamari**
1 tsp rice vinegar
1 tsp sesame oil
1/2 tsp sesame seeds
Method
- Add vegetable oil to a large skillet, and heat over medium-high heat.
- Combine all ingredients for kimchi pancake in a small mixing bowl.
- Once oil and pan are hot, add kimchi pancake batter to the middle of the pan. Quickly spread the batter out to make the pancake as thin and wide as possible without creating holes.
- Allow bottom to get crispy, then flip when it has started to brown. This can be a bit tricky due to the size – I find that using 2 spatulas helps with flipping.
- Allow the second side to get crispy slightly browned, then transfer to a paper towel lined plate (to absorb any extra oil).
- Allow pancake to cool slightly before cutting. While pancake is cooling, prepare dipping sauce by mixing all ingredients together in a sauce dish or small ramekin.
- Cut the pancake into squares or triangles. Serve immediately with dipping sauce.
Notes:
- *If you can find Korean buckwheat flour, that is great! Mostly, you want to avoid the toasted brown buckwheat flour (like Bob’s Red Mill) as this can be too bitter, or coarse buckwheat flour, which will affect the texture.

Though tamari implies that the product is made with rice rather than wheat, some companies use “tamari” as a buzzword when the product actually contains wheat 😦
- This recipe is great on its own with the dipping sauce as a rainy day snack, or served along side your favourite meals and Korean BBQ.
