Ingredients
1/3 – 1/2 english cucumber, sliced into half circles
2 forkfuls quick pickled red onions
1-2 tbsp goat’s milk feta, crumbled
1/4 – 1/2 tsp dried oregano
few cracks black pepper
pinch of seasoned salt
1 tbsp olive oil
Method
- Layer cucumbers, pickled red onions, and feta. Sprinkle over oregano, pepper, and seasoned salt. Drizzle over olive oil.
- Mix everything up and enjoy!
Notes:
- I love this salad as a speedy side salad and as a way to use up quick pickled red onions.
- If you want extra tang in the dressing, I highly recommend adding in a splash of the pickling liquid from the red onions.
- Goat’s milk feta can always be substituted for your favourite feta, or even a vegan feta if you’d like to make this dish vegan.
- To add extra dimension to this salad, I recommend using a bold extra virgin olive oil that has a bit more pepperiness.
