Raw Gingersnap Cookies (GF)

Ingredients

1 1/2 cups rolled oats (aka old fashion oats)*
1 1/2 tsp ginger powder
3/4 tsp cinnamon powder
1-2 pinches of salt

1/4 cup cashew butter**
1 tbsp molasses
3 tbsp honey or agave nectar

Method

  1. Add rolled oats, spices, and salt to a food processor and blend until oats become oat flour – the flour can be as fine or textured as you would like for your bars.
  2. Add cashew butter and molasses (or honey and molasses if using) and blend until the dough just comes together.
  3. Shape cookies [shaped cookies are best placed on a parchment-paper-lined cookie sheet or plate, not touching each other so they don’t stick] :
    • Method 1: Roll dough to 1/2cm (1/4 in) thick by rolling between two pieces of parchment paper then cutting with a cookie cutter or rim of a glass. If using this method, be sure to gather the excess dough and roll it out again until all of your cookies are made.
    • Method 2: Roll into a long snake/log shape and divide into the number of cookies you want. Roll into a ball with your hands then press with your hands or between two pieces of parchment paper to make the cookie shape.
  4. Place in the fridge overnight (or ~6-8 hours) for the dough to develop the best flavour!

Notes:

  1. *Not all oatmeal is guaranteed to be gluten-free. If you need this recipe to be gluten-free (ex. if someone eating them has a severe gluten allergy) make sure to buy certified gluten-free oatmeal.
  2. **You can use any nut butter of your choice. I use cashew butter because I find that it is the most neutral in flavour so these taste like my original gingersnap recipe. If you like the flavours of natural peanut butter or almond butter, etc, feel free to use your favourites!
  3. If you would like a little extra decoration and don’t mind the added sugar, you can also lightly press a bit of raw cane sugar on the top of the cookies to look more like the classic style of gingersnaps.
  4. These raw cookies don’t just have to be shaped into circular cookies (or whatever shape your cookie cutters are!). They can also easily be rolled into bliss balls or oat bars if preferred.
