Ingredients
Oatmeal Base
1/2 cup quick oatmeal
1 tsp ground chia seeds (white)
1/2 tsp vanilla
pinch of salt
optional: 1 heaping tbsp cashew butter, 1 tbsp pure maple syrup
Cinnamon Swirl
1/2 tbsp cashew butter
1/2 tbsp pure maple syrup
1/2 tsp cinnamon
Icing
vanilla coconut yogurt
Method
- Add all ingredients for the Oatmeal Base to a bowl. Pour over boiling water just to cover the oats. Stir to combine well. Set aside to set up as you work on the next step.
- In a small bowl (such as a single-serve dip bowl), combine all ingredients for the Cinnamon Swirl. Stir well until it is an even consistency throughout. Scoop into the corner of a piping bag or plastic baggy with a snipped corner.
- Pipe the Cinnamon Swirl onto the set oatmeal in a swirl pattern to create the cinnamon roll affect.
- Drizzle vanilla coconut yogurt in a zigzag pattern over the cinnamon roll oatmeal to give it Icing.
Notes:
- If you prefer rolled or steel cut oats, cook according to package directions or to preference. Mix vanilla, salt, and optional cashew butter and pure maple syrup into 1 cup of prepared oatmeal to create your base.
- Cashew butter can be substituted for any nut or seed butter of choice.
- Maple syrup can be substituted by coconut sugar a a bit of water to loosen the consistency of the swirl mixture.
- Coconut yogurt can be more thick or thin depending on the brand that you purchase from. I recommend using the brand with the consistency of your preference, but you can always adjust thickness if you are limited for options. Thin out coconut yogurt by mixing in a touch of water, or thicken it by letting it sit in a double lining of cheese-cloth or a nut milk bag.
