Cherry Chocolate Bliss Balls

Ingredients

1 1/2 cups rolled oats
pinch of salt
1/4 cup cashew butter
1/4 cup honey
1/2 tsp vanilla
2 tbsp dried cherries, soaked then drained and squeezed of liquid
2 tbsp mini chocolate chips or cacao nibs

Method

  1. In a food processor, blend oats and salt until oats are the size of coarse sand.
  2. Add almond cashew butter, honey, and vanilla, and pulse until just incorporated.
  3. Add cherries and chocolate chips (or cacao nibs) and pulse until mixture comes together completely.
  4. Roll mixture into balls.
  5. Place in the fridge to firm up and allow flavours to develop. For best results, refrigerate overnight.

Notes:

  1. Use whatever dried cherries (or other dried fruit) that is your favourite. I used dark cherries that I bought frozen and dried myself.
  2. I soak my dried cherries in water, but you can also soak them in apple juice or cherry juice to add more sweetness! Just make sure to squeeze as much liquid out as possible before adding to your “dough”. You can always add more moisture if needed (see below), but it is difficult to take it away.
  3. If mixture isn’t sticky enough to roll into balls, add a touch of honey, cashew butter, or water and blend until mixture can be rolled without crumbling.
  4. Bliss balls can also be placed in the freezer, then put into you lunch bag in the morning for the perfect snack at work or school.
