Homemade Cashew Butter

Ingredients

2 cups raw cashews
optional: pinch of flaky sea salt, 1 tsp vegetable oil (or other neutral flavoured oil)

Method

  1. Heat a large pan over medium to medium-high heat.
  2. Add cashews to pan. Roast until golden and fragrant (about 5 minutes), stirring frequently. Keep an eye on the cashews, especially when they start to change colour, as they can burn quickly.
  3. Add nuts and optional salt to a food processor or high speed blender. Blend for several minutes until it starts to become smooth. You may need to stop the machine and scrape down the sides occasionally so that everything may be incorporated.
  4. Add in optional oil and continue to blend until smooth and creamy.

Notes:

  1. I like to add coconut, avocado, or sunflower seed oil to the cashew butter as I find that this makes it even creamier, which I especially love when I use it in my other recipes. However, it is not necessary to add for creamy cashew butter, especially if you are avoiding oils.
