Lemony Tahini Dressing

Ingredients

2 tbsp tahini paste
juice from 1/2 lemon (~2 tbsp)
1 tbsp olive oil
1-2 tbsp water *
pinch of salt
pinch/few cracks white or black pepper

Method

  1. Combine all ingredients in a small bowl or container and mix with a fork or whisk.

Notes:

  1. *The amount of water that you need will depend on the viscosity of your tahini paste and how thick or runny you like your tahini dressing to be. This is all based on preference. Start with a little bit and adjust as you see fit – you can always add more but you cannot take it away!
  2. I often have left over lemons, especially if I have bought them in bulk, or I buy organic lemon juice with no additives, so I will freeze excess lemon juice into cubes. Depending on the size of your ice cube tray, this recipe needs 1-2 cubes of frozen lemon juice. To be more precise, you can always pre-measure into cube trays.
  3. I love having this dressing on nourish bowls (pictured), massaged into raw kale for salad or a side dish, and as a substitute to sour cream (especially if I have forgotten to soak cashews). It can really be used as a dip or dressing for any meal or snack!
