Chocolate Orange Oatmeal

Ingredients

1/2 cup quick oats
1 tbsp cacao powder
1 1/2 tbsp coconut sugar (or sweetener of choice)
1 tsp chia seeds
1 tsp vanilla
pinch of salt
optional: zest from 1/2 orange, 1 tsp maca powder*, 1-2 tbsp cashew butter or nut butter of choice

1/2 medium orange, segmented
1/2 tbsp cacao nibs

Method

  1. Add oats, cacao powder, coconut sugar, chia seeds, vanilla, salt, and optional add-ins to a bowl. Mix to combine.
  2. Add enough boiling water to cover the oats. If you like thinner oats add more water, and if you like thicker oats add less. Be aware that the oats will absorb water as they sit and the chia seeds (and optional nut butter) will thicken things up more. You can always add more water but you can’t take it away. Allow to sit for 1-3 minutes (depending on the oats that you have).
  3. Top with orange segments and cacao nibs.

Notes:

  1. I add a bit more flaky sea salt on top because I love love love salt with chocolate.
  2. *Maca powder is not recommended if you have hypothyroidism. I love it for its hormonal benefits and slight caramel flavour.
  3. Grapefruit, tangerine, clementine, and mandarin are great substitutes for the orange. Use your favourite flavours and what you have on hand.
  4. Cacao nibs can be substituted for chocolate chips, which will melt as you mix and eat your warm oats. I love the semi-sweet mini chips from EnjoyLife, but typically opt for nibs as they add another great texture and flavour to the oats.
