Ingredients
2 apples, cubed
1 tsp coconut oil
1/2 tsp cinnamon
1/8 tsp nutmeg
pinch salt
1/4 cup water
2 tbsp maple syrup
Method
- To a small saucepan, melt coconut oil over medium heat.
- Add in cinnamon and nutmeg and stir to coat in oil.
- Add cubed apples and stir to coat apples in spiced oil.
- Add water and maple syrup and stir to combine.
- Turn heat to medium high, put a lid on the saucepan, and allow to come to a bubble.
- Remove lid and cook for 5-10 minutes (depending on how soft you like your apples/what type of apples you use), stirring occasionally.
- Remove apples from saucepan with a slotted spoon, leaving the sweet sauce in the pan.
- Reduce sauce to desired thickness, then add back to the apples.
Notes:
- Choose whichever apples are your favourite for the best flavour. You can leave the peels on or peel them off depending on your preference.
- You can substitute coconut oil out for vegan butter for a different flavour.
- Use apples as a topping for pancakes, waffles, buckwheat crêpes, toast, nice cream, yogurt parfaits, and oatmeal. Pictured are paleo waffles (made using the Birch Benders mix I got from Costco) topped with the spiced apples and my raw almond butter.
