Peach Basil Soda

Ingredients (per glass)

1 tbsp peeled fresh peach, muddled, finely chopped, or puréed
6 small or 2 large fresh basil leaves
1-2 tsp honey (or choice of liquid sweetener)
ice
3-5 peeled fresh peach slices
soda of choice (ex. Perrier, club soda, ginger ale, ginger kombucha)

Method

  1. In a tall glass, muddle together the 1 tbsp fresh peach, basil, and liquid sweetener of choice. The amount if sweetener you use will depend on how sweet you like your drink, how sweet/in season your peaches are, and what soda you are adding in.
  2. Layer ice and peach slices to fill up the rest of the glass. The layering gives visual appeal once the soda is added. You can also focus the peach slices to the sides of the glass so that they show more clearly.
  3. Pour in soda of choice to top off the glass. You can add a straw if you like to stir everything when ready to drink.

Notes:

  1. 1 ripe peach is typically the perfect amount to make 3 glasses of peach basil soda. Half of the peach is for muddling and the other half is used for the peach slices. I find that peaches always have a more ripe side and a less ripe side, so I use the more ripe side for muddling.
  2. These drinks are non-alcoholic, but you can always add a shot of alcohol to the glass after adding the ice and before you add your soda. Or try substituting soda with champagne!
