Bliss Balls
Bliss balls are always my go-to healthy snack to make. They are so full of flavour and have the texture of cookie dough! Here are three recipes that I have shared so far… if you would like some more flavours ideas for the website or have any flavours that you think I must try, let me know in the comments below or on Instagram @staceycourtcom
Oat Bars
If bliss balls aren’t your cup of tea, why not transform them into moreish oat bars instead? These Triple Chocolate Oat Bars and White Chocolate Macadamia Oat Bars are a sure to alleviate any cabin fever symptoms you may be experiencing, and they go great with whichever tv show you’re currently binge-watching.
Don’t feel like chocolate but still want to try these recipes? Why not make the bars into cookies instead and make Raw Gingersnap Cookies instead!
Cashew Milk

As you may know, Homemade Cashew Milk is a staple in my home. The main reason being that it does not need to be strained of pulp like other non-dairy milks. I stock up on tons of raw cashews to keep in my pantry because of this, and since it is always around, it is in several of my recipes. I guarantee you’ll be seeing this recipe again and again in the future.
Chia Pudding

Vanilla Chia Pudding is just one of the many recipes that I include my homemade cashew milk in. It makes a great breakfast, snack, or dessert, and is completely versatile to whatever flavours and toppings that you add to it. If you have frozen fruit in the freezer, you can even make the recipe parfait style by layering in Strawberry Chia Jam (just substitute strawberries for whatever you have on hand) or open up a jar of jam from the pantry!
Mac & Cheese

The key to making a pantry-based mac & cheese recipe (if you’ve run out of Kraft Dinner…) is to make it with homemade cashew milk! Now, my Vegan Baked Mac and Cheese is typically not a completely pantry-based recipe, but if you don’t have vegan butter, butter or margarine on hand, you can substitute olive oil.
In addition, the miso can be omitted. However, anyone who has ever had miso in their fridge knows that it is a preserved non-perishable, so it is essentially a pantry item for those who already have it. Miso can last about a year in the fridge without a change in flavour, and then still stays okay to eat after that point, only the flavour stops being as intense. So if you have access to it, use it!
Pecan Butter

I typically have jars upon jars of nut butter stashed in my pantry, but the flavours that are available can be limited. That’s why I love making Pecan Butter with Maple. The flavour is so unique to any nut butter that I have ever had and is insanely delicious and versatile.
Chocolate BonBons

This is another recipe that is just as fun to make as it is to eat. The recipe for Pecan Butter and Jam Chocolates is just as versatile as the last. Although the recipe calls for Pecan Butter with Maple and Strawberry Chia Jam, feel free to add whichever flavourful fillings you desire/have on hand to your favourite flavours of chocolate.
Granola
Granola is a great pantry recipe since it is a pantry staple itself. Although it is a fantastic part of breakfast with yogurt and fruit (or homemade cashew milk and strawberry chia jam, as pictured) I am usually inclined to eat it as a snack, grabbing a handful straight from the container. These recipes are also delicious with added dried fruit and other trail mix goodies for a more composed snack.
Apple Cinnamon Granola with Pecans
Instant Oatmeal
I love having Homemade Instant Oatmeal Packets made and ready to go in my pantry as a super quick and filling breakfast. The best part about them is that they are a versatile base for whatever you have on hand, whether it is fresh berries, dried fruit, nuts, frozen fruit, or other pantry ingredients. My favourite pantry-only instant oats recipe is my Chocolate Chip Cookie Oatmeal… I think the name is a good enough explanation in itself!
Muffins

Vegan Paleo Pumpkin Muffins are all that I can think about when I want to bake something comforting. The autumnal spices, dense muffins and crunchy toppings all come together into the most heart warming comfort breakfast/snack/dessert. The hardest part about these muffins is having just one!
Roasted Chickpeas

I usually always want something sweet to eat these days, but sometimes I just need something salty and savoury to break up the sweetness (so I can eat more). Cajun Roasted Chickpeas fill this craving perfectly, and can be enjoyed as a crunchy snack or as additional protein, fibre, and spice with a meal.
Tea

Having hot drinks is fantastic for keeping your throat clean of germs, which is very important during this time! Unfortunately, my typical throat elixir is not a pantry-based recipe, but any tea that you have on hand at home is sure to have health benefits for your body on top of the benefits from the heat on your throat. Just be sure to remember to drink it before it has cooled down!
This recipe may be more specific to Canadians, but if you are able to travel to your backyard or a forest you are sure to find a fresh cedar tree all year round. Cedar leaves can be made into two delicious and seriously healthy Cedar Teas. These teas have been enjoyed in these parts for perhaps tens of thousands of years for their health benefits, but I honestly just find them delicious and convenient since there is always cedar nearby.
