Grape, Walnut, and Feta Salad

Ingredients (per person)

2 loose handfuls (~3-4 cups) spinach and/or arugula
1/4 cup red grapes, halved
2 tbsp goat’s milk feta
2 tbsp walnut halves, crushed
2 tbsp red onions, thinly sliced
2-3 tbsp ginger sesame vinaigrette

Method

  1. Add all ingredients except for dressing into a salad bowl that is a bit bigger than what you need for the ingredients (to make tossing the salad easier).
  2. Add dressing just before serving and toss to coat everything lightly in dressing.

Notes:

  1. The ingredients in this salad are a bit heavy, so if serving this to company, I recommend saving some of the fillings to sprinkle on top for presentation so that your guests can see all of the goodies that they will be having.
  2. If you do not want to make or don’t have the ingredients for the vinaigrette, there are also options available from Renée’s or PC in Canada.
