Ingredients
1/2 cup quick oatmeal
1 tsp ground chia seeds
pinch (~1/8 tsp) salt
dash (less than 1/8 tsp) cinnamon
1 tbsp honey
1/2 tsp pure vanilla
optional; 1 tbsp cashew butter
2 tbsp-1/4 cup chocolate chips
Method
- Mix oatmeal, chia seeds, salt and cinnamon in a bowl.
- Add remaining ingredients except for chocolate chips to the bowl.
- Add enough boiling water to cover ingredients and stir until well combined.
- Allow to sit for 1-3 minutes in order to thicken.
- Fold in half of the chocolate chips into the oatmeal. Do this gently in order to keep the chips intact for eating as the oatmeal is probably still hot.
- Sprinkle the rest of the chocolate chips on top of the oatmeal to finish off your cookie.
Notes:
- Choosing ground white chia seeds maintains the “cookie’s” light colour.
- I like to add cashew butter to this oatmeal as it is essentially flavourless, while adding calories and nutrients as well as thickening power. You can leave this out or add peanut butter if you prefer a peanut butter chocolate chip cookie flavour.
- You can also add 1-2 tbsp of cacao powder (raw and does not contain sulfites) if you want a double chocolate chip cookie. Mix in with the dry ingredients.
- If you do not eat honey, you can always substitute for maple syrup or other natural liquid sweeteners.
- Choose whichever chocolate chips you prefer. I opt for dairy-free, mini, semi-sweet chocolate chips (the ones pictured are by Enjoy Life [not sponsored], which only contain brown sugar, cocoa mass and cocoa butter). You can choose mini or regular sized chips; chocolate chunks; dark, milk, white, semi-sweet or bitter sweet chocolate; butterscotch chips; cacao nibs. Whichever gets you eating breakfast!
- Add however much boiling water you prefer to your oatmeal. Less water creates a thicker oatmeal and more water creates a thinner oatmeal. Remember, the oatmeal will thicken (especially with the chia seeds in there), and you can always add more water but you cannot take it out.
- You can easily meal prep the dry ingredients like my homemade instant oatmeal packets; just add the wet ingredients and water when serving. Keep the chocolate chips separate so that they do not melt when you add your boiling water.
- Enjoy with homemade cashew milk or a dollop of yogurt!
