Mango Nice Cream

Ingredients

1 medium banana, frozen
1 cup mango, frozen
1 tbsp fresh lemon juice

Method

  1. Add the banana and mango to a food processor or high speed blender.
  2. Blend until the fruit is broken up to the texture of course sand. You may need to stop the food processor/blender and scrape down the sides a few times to do this.
  3. Add the lemon juice.
  4. Blend until the everything comes together into a cream, whipped ice cream texture. Again, you may need to scrape the sides of your food processor/blender down to get to this point.

Notes:

  1. As this recipe does freeze solid (not scoopable like ice cream), it is best served immediately or frozen in popsicle molds to be enjoyed later.
  2. This recipe is amazing topped with slivered almonds and honey and enjoyed as an instagramable nice cream bowl!
