Ingredients
4 ripe peaches, carefully pitted and sliced into 8-10 wedges each
1 tbsp olive oil
1 tbsp pure maple syrup
1 tsp fresh lime juice
zest from 1/4 lime
pinch of kosher salt
Method
- Mix peaches with marinade and allow to sit and marinate while your grill heats up.
- Turn on your barbecue to medium high.
- Once your barbecue is hot, place peaches sliced side down on the grill (across the grill bars so that you get beautiful grill marks and the peaches don’t fall into the fire).
- Allow to cook for 5 minutes with the lid down.
- Flip the peaches to grill the other cut side, and allow to cook for an additional 5 minutes.
- Take off the grill and allow to cool slightly before eating.
Notes:
- Olive oil may be substituted for melted butter if you are not serving vegan guests, and the lime juice and zest may be substituted for any citrus fruit.
- The grilled peaches are shown here in a spinach salad, but they also go fabulously with coconut whipped cream, in an ice cream sundae or yogurt parfait, in crepes, wrapped in prosciutto, or served with grilled pork.
