zucchini
olive oil
salt & pepper, seasoned salt, or seasonings of choice
Method
- Preheat oven to 375°F.
- Carefully slice zucchini lengthwise to desired thickness, using a knife or a mandoline.
- Brush both sides of zucchini slices with olive oil.
- Place oiled zucchini on a baking sheet and sprinkle with seasonings of choice.
- Place in the oven for 20-30 minutes, flipping halfway through the cooking time. After flipping, and before putting back into the oven, you may sprinkle more seasoning over the other side of the slices if desired.
Notes:
- The amount of olive oil and seasoning will depend on how much zucchini you are cooking. I like to put a bit of olive oil into a ramekin to make getting it onto a kitchen brush much easier.
- Brushing on olive oil produces a much better product compared to drizzling olive oil over the zucchini or tossing everything together. The olive oil absorbs into the white flesh very quickly, so getting an even coating is very difficult with the drizzling and tossing methods.
- You may choose to line your baking sheet with parchment paper or leave it bare.
- The time that you choose to cook your zucchini will depend on how thick you sliced the pieces, and on how cooked you like the pieces. For example, a thinly sliced zucchini cooked for 30 minutes can produce a browned, crispy zucchini chip.
