Ingredients
1 cup rolled oats
6 tsp pumpkin spice (OR use recipe below)
1/4 tsp salt
1/4 cup almond or cashew butter
1/4 cup molasses
Pumpkin Spice
2 tsp cinnamon
2 tsp ginger
1 tsp all-spice
1/2 tsp nutmeg
1/2 tsp clove
Method
- In a food processor, blend oats, pumpkin spice and salt until oats are the size of coarse sand.
- Add almond cashew butter and molasses, and pulse until mixture comes together completely.
- Roll mixture into balls.
- Place in the fridge to firm up and allow flavours to develop. For best results, refrigerate overnight.
Notes:
- If you do not have pumpkin spice, you can use 1 tsp cinnamon, 1 tsp ginger, 1/2 tsp nutmeg and 1/2 tsp clove
- Blend the oats to your preferred texture. You may like blending the oats only a bit and having a chunkier texture to the balls, or you may want the oats completely blended for a smooth, doughy texture.
- If mixture isn’t sticky enough to roll into balls, add a touch of honey, almond cashew butter, or water and blend until mixture can be rolled without crumbling.
- Bliss balls can also be placed in the freezer, then put into you lunch bag in the morning for the perfect snack at work or school.
